• Not Critical: CHI-2 — CITY OF CHICAGO FOOD SERVICE SANITATION CERTIFICATE - Comments: No certified food service manager on site, No certificate posted while handling and serving TCS foods ( eggs, ham, potatoes...) instructed to obtain. Priority foundation violation 7-38-012.
• Not Critical: CHI-9 — NO BARE HAND CONTACT WITH RTE FOOD OR A PRE-APPROVED ALTERNATIVE PROCEDURE PROPERLY ALLOWED - Comments: Bare hand contact with ready-to eat foods. Observed a cook assembling a sandwich by grabbing Bread, sliced tomatoes, cheese and lettuce with bare hands. Instructed manager not to handle ready-to-eat foods with bare hands. Priority volitation 7-38-010.
• Not Critical: CHI-49 — NON-FOOD/FOOD CONTACT SURFACES CLEAN - Comments: Shelves cooking equipment through facility not clean, food debris and grease build-up noted. Instructed to clean and maintain.
• Not Critical: CHI-55 — PHYSICAL FACILITIES INSTALLED, MAINTAINED & CLEAN - Comments: Nylon sheets covering sections in prep kitchen ceiling, card board used as a barrier between 3-comp and rear storage. Instructed to provide proper surfaces and maintain.
